Wusthof Sharpening Steele 23cm

With the Wüsthof sharpening steel, quality knives can be re-sharpened easily and effectively at any time: run the blade over the sharpening steel at an angle of 20 degrees in the direction of the cutting edge; after six to eight repetitions, alternating on each side, the knife regains its original sharpness.

Sharpening is effective when the knife/scissors are not yet blunt, but simply no longer have the usual sharpness. The Wüsthof sharpening steel realigns the thinly ground cutting edge of the knife/scissors (fine drawing) and this keeps it sharp for a long time.
